In a large mixing bowl, pour lukewarm (not hot!) water, sprinkle yeast over water, sprinkle pinch of sugar over yeast. Let mixture sit undisturbed for
10 - 15 minutes.
While the yeast is "working", grease pizza pan with Crisco or a thin layer of olive oil.
After the yeast has worked it should appear frothy and active, stir the yeast/water mixture until it's well mixed.
Add salt, sugar and oil (one at at a time) to yeast/water mixture, stirring well after each addition.
Add about 2 cups of white, unbleached flour (one cup at a time), stirring well after each cup. The dough should still be a little "sticky." Pour a quarter cup of flour (or more) onto flat surface. Turn out the mixture on top of the floured surface, and dump a quarter cup of flour on the top of the dough. Knead for 5 minutes until the dough is smooth but still slightly sticky. You can keep adding a handful of flour to the table top as you knead and as you need (!) - otherwise the dough will stick to the surface.
Grease your fingers with Crisco or olive oil and place a piece of dough into a pizza pan. Pat, stretch, and push dough to fit the shape of the pan, leaving a raised crust around the edges. Brush top with a little olive oil (optional). Let dough sit for 15 minutes to "rest." After 15 minutes, put your favorite sauce, cheeses, toppings on, and bake in preheated 400 degree oven for about 20 minutes. Let the pizza sit for 5 minutes before cutting.
